Halloween Treats from Caramel Apples to Cakes!

As someone who likes to dress up or just dress outrageously, I've always been a fan of Halloween. As a child, I always wanted to be a "punk rocker" or the popular cartoon character of the year, but my mother wouldn't have it. She made every costume I wore, from the time I was Queen Elizabeth to when a refrigerator box was crafted in to a costume to make me a House, complete with a real lawn. (I could not sit down in the house costume, so my mother made me wear another homemade costume underneath!) This year was no exception & my mother produced 3 awesome costumes for myself, Ryan, & Strummer before I had even settled on what we should be. Ryan made a dashing Captain Hook, while I opted for the role of Peter Pan, Strummer was the Crocodile & I even had a lantern with a little Tinkerbelle on it to round out the cast. Strummer was a little less than thrilled by her costume, so I think the total minutes her costume was worn hover around 15.

We decided to host a Halloween potluck at our place, as San Francisco now lacks a celebration in the Castro & we're always happy to fill up on delicious vegan food! I started by making Caramel Apples from an excellent & easy recipe Kittee mentioned from Chow. I opted for three varieties, plain & Chick-O-Stick or Peanut Butter Bar coated. Next I took mini Chick-O-Sticks & Peanut Butter Bars & made candy bars by covering them in chocolate, similar to Butterfingers. I know most people say Chick-O-Stick taste like Butterfinger centers, but I must say the Peanut Butter Bar is far superior, as it lacks coconut. They're both downright delicious though & far too many were consumed!

The assortment of dishes & costumes were excellent! Elmo, a Deviled Egg (not vegan!!), Holly Golightly, a bumble bee, a tree, & even Sarah Palin & President Ahmadinejad were just some of the people in attendance! The treats on the table were great too, such as Pumpkin Whoopie Pies & Uncheese + Crackers from Erin at Vegan Homemade, Mummy dogs, baked beans, my Buffalo Tofu with Blue Sheese dressing, an excellent eggplant dip from Megan at The Sisters Vegan, & a killer Rice, Avocado, Tempeh dish that we all marveled at when it was served in a dome shape! We also snacked on vegan Doritos, chocolate covered pretzels, Candy Cane Joe-Joe's, Sour Patch Kids, Swedish Fish, & Ghost Dots. A filling feast was consumed by all & I feared I wouldn't fit in my costume by the end of the night! Luckily, that didn't happen & instead I just went to bed at 6am, happy that the shindig was a success.

Previous to the party, I made a Halloween themed birthday cake for a friend & awesome gal, Chris. She wanted something to fit in with the spooky theme of her birthday, so we opted for a Chocolate Orange cake, so we would have the Halloween colors in full effect. I topped it with a ganache spiderweb & left it at that, so she could further decorate with candles. It was pretty fun to make & I can see more ganache spiderwebs in my future!

July 4th Ice Cream Social & Potluck, Prop 2 Fundraiser success!

Potluck mania is alive & well in my home! I love a good potluck, from the monthly brunch I attend, to a Holiday get-together, an excuse to have a spread of food & hang out with friends is alright by me. The 4th of July was utilized as a reason to have people over & due to my current obsession with frozen treats, I hosted an Ice Cream Social & Potluck!

We started with a fabulous food feast with everything from Ethiopian food, noodle & potato salads, & sweet potato fritters, to homemade guacamole & other dips, faux meat skewers & BBQed seitan Shawarma! Everyone dug in to the display with fervor & managed to clean out most of the food options & I found myself reminding people to, "Save room for Ice Cream!".

Initially, I worried about a lack of ice cream, everyone seemed to be bringing dishes instead of a store bought item, which is wonderful, but makes for a bad Make-Your-Own Sundae party. In the end, no worries were needed as we had 17 pints & 7 quarts of vegan ice cream! Imagine opening your freezer to all of those containers! I also made a spread of treats & toppings such as brownies, whipped cream, fruit, nuts, custard, caramel & chocolate sauces, & 2 types of cones.

Once it was ice cream time, a line formed from the kitchen in to my living room, as people took turns approaching the sundae station & loading up on goodies. The clear winner was Double Rainbow Soy Cream, 12 of the pints were their delicious confection & they were quickly demolished! (If you haven't had a chance to try Double Rainbow Soy Cream, seek it out, the Vanilla Bean is BY FAR the best vegan vanilla ice cream I've ever had, no soy beany flavor!) In the end, I had 4 loaded up ice cream sundaes & an upset stomach, but it was totally worth it. I love "make-your-own" parties & this certainly won't be the last one I host!


As I mentioned in my last post, Californians for Humane Farms had a fundraiser to benefit Prop 2, a ballot initiative on the upcoming November election which would allow farm animals to stand up, sit down, & turn around in their enclosures. I'm happy to say the event was a success & raised DOUBLE our expected donation amount! The silent auction went amazingly, thanks to the help of donations from Julie Hasson at Everyday Dish TV, Hannah Kaminsky of My Sweet Vegan, Joni Marie Newman of Cozy Inside, & Isa Chandra Moskowitz of Veganomicon!

In addition to helping plan the event, some sweet treats were also whipped up, courtesy of Sugar Beat Sweets; over 100 mini Vanilla bean cupcakes topped with Peach Mousse! Sadly, I was too sick to attend the event, but Ryan was kind enough to take this photo of the mini cupcakes set up. Thank you to everyone who made the fundraiser a success & don't forget, YES ON PROP 2 in November!

Chocolate & Mint; made for each other, a Holiday Potluck & Cupcake Hero!

'Tis the season for Chocolate & Mint to mingle together in deliciousness! If noshing on Trader Joe's Candy Cane Joe-Joe's isn't enough for you, you make have found yourself doing some baking using this combination commonly used at this time of year.

As I mentioned in a previous post, I've been looking for the perfect vegan chocolate cake recipe. I need depth of flavor & a bit of fluff, not like those cocoa-only based cakes out there. I believe I may have found my winner, but as a person who doesn't like to settle for second best, I have a few more things to try before posting it here. Luckily, this deep chocolate cake has been a perfect pairing with the kick of mint, so I used it in both cake & cupcake form to make treats for friends & family.

My brother Kyle turned 21 in early December & I volunteered to make him a birthday cake, of course! I recalled his fondness for Mint Chocolate Chip ice cream as a child, & used it as my inspiration for a Chocolate Cake filled & decorated with Mint Icing & topped with Bittersweet Chocolate Ganache. While I'd never considered myself a "mint person" in the past, I was quickly converted & couldn't get enough of this cake's combination. Luckily, my family felt the same & the cake was quickly consumed!

I'm always looking for an excuse to gather together & eat with friends, so I hosted a Holiday themed party in my home for a group of local vegans. I know many of us don't get a full spread of options at family celebrations, so this was a chance to load up our plates without questioning the contents of anything! The food was delicious; from latkes to herbed stuffing, vegan quiche and quinoa cakes, I was impressed with the spread of food that came together! I was on dessert duty & decided a return to the chocolate mint combination was in order, but in an easily served cupcake form!

Rich chocolate cupcakes were topped with a swirl of Mint Icing & Candy Cane Joe Joe cookies hand dipped in Bittersweet Guittard Chocolate! The depth of the chocolate played off the refreshing mint, while the dipped cookies were a treat all on their own! For those who've never had a Trader Joe's Candy Cane Joe Joe, it's a sandwich cookie similar to an Oreo, but the center contains a peppermint-vanilla creme with crushed candy canes in it! While the combination may sound odd or just alright, these cookies are highly addictive & similar to the Thin Mints your local girl scout pushes.

Chocolate Dipped Cookies
While hardly a recipe, I thought some information on dipping techniques could be useful.

Ingredients & Tools:
Chocolate of your choice, chopped (I used E. Guittard Bittersweet Wafers, no chopping needed!)
Cookies of your choice
A double boiler or a water filled pot with a bowl suspended over it
Parchment paper on a flat surface near your stove top

Instructions:
Place the chocolate in the bowl or top of your double boiler & heat it up until it is fluid, being careful not to burn it. Make sure you have a decent amount of chocolate, so you can easily cover the size cookie you're using.

Once the chocolate is fluid, dip a single cookie in to the bowl coating each side evenly. It's likely you'll burn your fingers, especially if you touch the bottom or sides, so be cautious of this & move quickly!

Once coated, let the excess drip from the cookie & place it on the parchment paper to dry.
Sandwich cookies are great for this, as you can stand them up to dry & the chocolate that moves to the base of the cookie makes an excellent platform to keep them from falling over on your cake or cupcakes.

Let the chocolate dry completely while you tackle another project. Don't touch them, or you'll have smudges & fingerprints on them.

Once the cookie is dry, it will lift cleanly from the parchment paper. Try not to eat them all before they make it on to your baked goods or give in & make them especially for snacking on!

By the way, the theme for December's Cupcake Hero contest happens to be mint, so I thought I'd enter my Chocolate cupcakes with Mint Icing & Bittersweet chocolate dipped Candy Cane Joe Joe's, as I've never seen a vegan entry in the contest. The co-host is the awesome Natalie from Bake & Destroy, who rocks out vegan cupcakes of her own from time to time!
