Sweets in Chicago, a Glazed Donuts video & a Mini Foods Party!

As I mentioned last week, Chicago has quite the selection of savory options, especially of the comfort food persuasion, but they also have a plethora of options for the sweet tooth! One such option is Smash Cake, a bakery & party spot from the minds behind the Bleeding Heart Bakery. As always with pastry chef & owner Michelle Garcia involved, the decor is fun & eclectic, the pastries are all organic & the vegan options are plentiful. We decided to go with a Blueberry Tea Cake with a delicate & delicious crumble top, a deep chocolaty Brownie flecked with Walnuts, & a towering piece of Chocolate Cake with Peanut Butter frosting, that was sadly a bit dried out. That being said, Smash Cake is a nice spot to hit if your in the adorable neighborhood is resides in!

Another fun option is iCream, home of ice cream made utilizing molecular gastronomy! First, you pick a base (soy for the vegans), then a flavor, a mix-in, & a topping. They take your combination, add it to a Kitchenaid Mixer, then next thing you know fog is billowing around the mixer as the liquid nitrogen kicks in & freezes your concoction. I went for Caramel ice cream, with Bananas as a mix-in, & Chocolate sauce. One issue I ran in to was they just threw the bananas on top, so when I asked them why it was called a "mix-in" but was thrown on top, they offered to mix it in for me, which resulted in weird gummy chunks of banana & all of my chocolate sauce mixing in & ruining my caramel ice cream! Oh well, next time I'll make sure they get it right!

A new option in Chicago comes from a company called Glazed Donuts, purveyors of unique cake donuts, available in locations throughout the city. Most of the flavors are vegan & their mailing list let's you know what's in store for you weekly, so you can get your donut fix when needed. Natalie from Bake & Destroy & I had the chance to try Mexican Hot Chocolate & the Juniper Spice Cornmeal Orange at Bite Cafe, where the donuts are made. We made a video of us giving the low down on them, so check it out!



Have I mentioned here that I love potlucks? Of course I have! While I was in Chicago, one of the coolest potlucks came together, a mini food party! It's just like it sounds, everyone makes miniature versions of food for everyone to share! The culinary skills of this potluck crew was impressive & we enjoyed Reubens, BLTs, Pizza, Twice Baked Potatoes, Corn Dogs, and two of the best things I've ever eaten, vegan Chicken & Waffles, & Mexican Pizzas, ala Taco Bell, all miniature, of course! On the sweet side was mini versions of Root Beer floats with Temptation ice cream, Strawberry Shortcake Trifles, Coconut Cream Pies, Wedding Cakes, Fruit Pies, Black and White Cookies, & S'mores Pies topped with Dandies Marshmallows & toasted with a torch! One would think smaller portions would reduce your food consumption, but I can safely say everything was so amazing, it was far too easy to justify "just one more" of just about everything!

One final sweet I ate in Chicago was something I have been dreaming of for years. During the holidays, my family always buys an assortment of chocolates from See's Candies. Everyone in my family knew the Scotchmallow, a thick layer of caramel, topped with honey marshmallow, & coated in semi-sweet chocolate was MINE or I would bite your fingers off. Obviously, that hasn't been the case for quite some time, but when I mentioned this to my friend Megan, she set out to veganize this treat. JACKPOT! Using her killer caramel recipe, & Dandies marshmallows turned in to a thicker marshmallow cream, she filled cups with semi-sweet chocolate & the layers of perfection, & churned out a seriously amazing replica! It took all my power not to hoard each & everyone one & it's safe to say I ate more than my fair share of these amazing morsels!

Chicago is a fabulous city for vegans & I can't wait to get back there! If you're considering checking it out, stop resisting & go check it out!

Chicago, the Sugar Shack; part one.

On a whim, I booked a trip to Chicago recently. I always like to explore new cities & Chicago has long been on my list of places to see. Not only do they have a selection of vegan options, they also have the awesome Natalie from Bake & Destroy & the posse at Chicago Soydairy! When contemplating dates, I noticed an upcoming listing for Renegade Craft Fair. How could I resist?

The trip started Thursday afternoon, when I flew in to town & caught the El to my friend Joy's house to stay with her & her dog, Rosetta Cheese. After a bit of rest, Joy & I headed over to Handlebar to meet up with Joel & Meave who also happened to be in town from San Francisco. Handlebar is a pescatarian bar & grill frequented by bicyclist & has a menu with a selection of vegan options. The Buffalo 'Chicken' wrap & seitan Tortellini were ordered among the table & despite the lacking amount of buffalo & ranch sauces in my wrap, all satisfied with our selections. Joel opted for mini apricot hand pies for dessert, which I was lucky enough to get a nibble of; they tasted like jelly filled donuts!

The next day I headed out in to the rain to the Chicago Diner, famous veg dining spot since 1983. Between suggestions from Steven, my dining companion & some online research, I chose "The Radical Reuben" & boy, was it a good choice! The combination of the grilled seitan, sauerkraut, & thousand island dressing was wonderful & I've been trying to recreate it at home ever since. I also had "Stuffed Potato Skins" with melty Teese all over them! Of course, I had to try the baked goods, since the diner has quite the selection of vegan cakes, cheesecakes, & other treats. The first thing I noticed was the cakes were refrigerated. As someone who's not a fan of cold cake, I asked them to pull my selections out of the case before my meal, so they could come back to room temperature. I insisted Steven split the Cocoa Mousse cake & the Cookies & Cream cake with me & luckily they were almost at room temperature when we were ready for them. The cakes have a hearty, wholesome taste to them, likely due to the wheat flour used. Unfortunately, the refrigeration had got to them a bit, so they were on the drier side, but I enjoyed all the different frostings & wondered how they made the nice whipped cream-like frosting. Rumor has it, the weekend specials are the best treats to try, so I'll be sure to check those out next time!

Later that night, Steven & his friends had a potluck! You know I love a good potluck, so I was thrilled to be invited. The Chicago crew knows how to do it up & I was stuffed with tons of amazing food including "Isa Pizza", mini cucumber sandwiches, roasted potatoes, Teesey bread, & more. Much like myself, everyone loves to make dessert, so the sweets spread was phenomenal! Apple pie, Mint Devil dogs, Zucchini muffins, homemade Caramels, & 3 awesome types of Temptation ice cream filled my plate! I think I surprised everyone with the amount of dessert I consumed, but I may have shocked them even more when I couldn't resist going back for another round of ice cream; Lemon Verbena & Blueberry Temptation?! I mean, c'mon, amazing!

On Saturday, the gruesome twosome, aka Natalie & myself, embarked on a sugary tour of Chicago, that would make even the sweetest tooth cry. Chicago decided to hate on me by pouring down rain, but we were determined to get sugared up & started off at The Bleeding Heart Bakery! The Bleeding Heart Bakery may be the coolest pastry shop I have ever laid eyes on. I felt like I was walking in to my dream bakery, from the brightly colored kitsch to the cupcake tables. After browsing around & meeting Michelle, we settled on 2 organic, vegan cupcakes; Chocolate peanut butter & Chocolate vanilla. The cases here are kept at room temperature, thankfully, & while the moisture of the two cakes was inconsistent, the chocolate peanut butter was downright lovely! If nothing else, it's worth a visit to see the amazing shop, but I say grab yourself a treat. I only wish I had made it to Chaos Theory Cakes as well since it's the home of unique flavors.

Next, we braved the rain again & headed to Renegade Craft Fair where we got soaked, I spent a bunch of money at Circa Ceramics, & I ordered a custom bag from Made by Hank. Who I am kidding? I bought a lot more than that, for I am a sucker for cute. Tired of the rain & ready for sugar shock, round 2, we headed to Sweet Cakes Bakery. While they don't advertise as being a vegan destination, the owner is actually vegan herself, so many of the cakes are as well, despite not being labeled as such. Luckily, her father runs the counter & can tell you what is vegan. Being the end of the day, the case was a bit bare, but we each had mini Mint Chip & Orange Vanilla cupcakes & I ordered a small Peach pie. Once again, the case was refrigerated, so the cupcakes were a bit dried out, but the orange had some nice flavor to it. Outside Sweet Cakes, Natalie & I had some fun in the courtyard taking pictures with the odd stacks of trucks & giant horse statue. I hope the owner will make use of the patio in the future, it was a great space!

Jittery & ready to be out of the rain, we headed back to Natalie's house. You may be surprised to find out, we headed to yet another vegan baked goods spot, but I'll be saving that until next time!

British Bulldog's Custard Berry Tart with Biscuit Crust

Okay, I'll admit it, in my childhood, I was a fan of WWF wrestling. Saturdays were filled with body slams & beefy men in tights; Hulk Hogan, Macho Man Randy Savage, Rowdy Roddy Piper, the Ultimate Warrior, Jake the Snake, Bret "the Hitman" Hart, I watched them all while yelling at the television. Needless to say, my mother was less than thrilled. What does this have to do with vegan food you ask? Well, Natalie from Bake & Destroy is currently holding a "Sugar Slam!" competition of wrestling inspired desserts & I decided to whip up an entry.

When coming up with ideas, many things danced through my head, "cupcakes with snakes popping out!", "something with blood!" & then I decided to go another route. I never make tarts. In fact, this is my first tart with a tart pan that has been sitting here a few months. Enter, the British Bulldog! I think it's safe to say he would like a tart! My trip to London had provided me with some goodies to incorporate in my dessert, namely McVitie's Digestive Biscuits (only the LIGHTS are vegan) & Bird's Custard Powder. With summer's wonderful berries flooding the farmers market & my loot from London, I set out to create a tart fit for a wrestler!

British Bulldog's Custard Berry Tart with Biscuit Crust
Ingredients:
Crust:
2 cups Digestive Biscuits, Rich Tea Biscuits, or Hob Nobs (approximately 14 biscuits), crumbled.
6 Tbsp Earth Balance, melted.
a pinch of cinnamon (optional)

Custard:
2 cups soy milk
2 Tbsp sugar
2 Tbsp Custard Powder (try Bird's or Orgran)
1/4 cup lemon juice
1/2 tsp arrowroot or cornstarch
1/2 tsp vanilla extract
1/2 tsp lemon extract
1/2 vanilla bean, split & scraped. (optional)

1 cup strawberries, sliced in to strips.
1 cup blueberries

Instructions:
For the Crust- Preheat the oven to 375 degrees & spray a 9 inch tart pan with non-stick spray.

Over medium heat, melt 6 tbsp of Earth Balance.

Crumble biscuits until you've reached 2 cups & place them in a bowl with the cinnamon.

Add the Earth Balance until a soft crumbly dough forms & then press it in to the bottom & sides of the tart pan.

Bake the crust for 10 minutes & let it cool completely.

For the Custard- Combine 2 tbsp of the soy milk, the sugar & custard powder, whisk to combine, forming a paste & removing all lumps.

In a saucepan, combine the paste & the rest of the soy milk. On medium heat, bring the mixture to a simmer & let it thicken, stirring occasionally.

Whisk the lemon juice & arrowroot together, once again making sure there's no lumps. Add the lemon juice to the thickened mixture & bring it back to a simmer, continue to thicken the mixture.

Once thickened, turn off the heat, stir in the extracts & vanilla bean. Place the custard in a bowl with a layer of plastic wrap on the top of the custard, so a skin doesn't form. Place in the refrigerator until it is completely cooled, it will firm up quite a bit once cool.

Assembly- Once everything has cooled, add the custard to the crust, filling all the way to the edges. Make sure you don't leave too much custard in the middle, or your fruit will sink in & disappear.

To make a Union Jack; From top to bottom & across the sides form a cross with your strawberries, then with thinner sliced berries, make an "X" shape.

Use the blueberries to fill in the vacant spaces, leaving visible custard on either side of the strawberries to make the white lines.

Place your finished tart in the refrigerator to bring everything up to the same temperature or be a rebel & dig in! I think the British Bulldog would opt to eat it straightaway!

My Notes: This makes a light, fluffy custard that would be good with any sort of fruit. Many grocery stores carry Bird's Custard Powder, but if you don't want to use it, you can try a flour or cornstarch thickened recipe for custard or pastry cream. Most biscuits or cookies would suitable for the crust, I just love a good digestive & was thrilled to find the McV's Lights to be vegan. Many other brands of digestives are vegan, just read the label!
