Dining on the run; Frozen Yogurt, Circus Demos, Donuts, & a Potluck!

Life has been busy lately & it seems like I've been everywhere but home! Last week, I headed down to Palo Alto to have a meetup at Fraiche, home of my favorite vegan frozen yogurt. It was a small group of Ladybros, but the attendees included Megan from Say It's Not Soy, Jordan from Too Vegan to Function, Erika from Strange & Violent Creations, & Jennifer who may be the only vegan on earth without a blog! You may also recognize Jordan & Erika from their podcast The Cosmopolitan Hour! I can be heard babbling on Episode 21 & a few other episodes, so you should listen in! Back to the frozen yogurt, did I mention I'm obsessed? It's plain & tangy yogurt topped in your choice of toppings. I went with Mango & Apricot this time & was saddened to find out they've discontinued Pineapple, my topping of choice. Rumor has it, San Francisco gets a Fraiche location a mere 6 blocks from my house in 2 weeks. Oh man, I'm in trouble! Delicious, delicious trouble.

Recently, I've been down in San Jose with Citizens for Cruelty-Free Entertainment to pass out fliers to circus-goers to let them know Ringling Circus abuses their animals & animals should not be used for entertainment. It's always an interesting time, as reactions vary wildly, but ultimately if you change the minds of a few people, it is completely worthwhile. If you're in the Sacramento area, Born Free USA will be at the Arco Arena leafleting Thursday, August 27th through Sunday, August 30th & volunteers are always welcome. I'm going to try to make it out there Friday & Saturday. Not in the area? Born Free USA has circus & other animal related literature to hand out in your own area.

While in the South Bay, I had the chance to check out Psycho Donuts in Campbell & bring back some donuts for the circus volunteers. While I'm not the biggest fan of their shtick (mental illness isn't funny), I AM a big fan of their "We Been Vegan" donut. A donut covered in Cinnamon & Sugar may not sound like much with all their other over-the-top offerings, but this old fashioned cake donut was fluffy & moist with just the right amount of sweetness & spice from the coating. There's rumor of the vegan options expanding & I hope that's the case!

Over the weekend, I went to a housewarming party for two of my favorite gals, Meg & Kelly from The Sisters Vegan. It was a potluck, of course, & the theme was Middle School Foods. I made some Coconut Cake Balls, which didn't quite fit the theme, but I also made mini Bagel Pizzas, ala Bagel Bites! I took the highbrow route & made them Garlic & Heirloom Tomato with a blend of Italian & Cheddar Daiya Cheese. I have to say, they were pretty darn good & I wouldn't turn down another chance to eat them! The potluck spread was pretty tasty, Erin from Vegan Homemade made an awesome Potato Salad & there was everything from TWO types of Corn Dogs to Peanut Butter Cups, Cookies, & Box-style frosted Brownies. Do I even need to say we were stuffed?!

On a final note, did anyone else celebrate National Waffle Day yesterday? We had vegan Cheddar & Green Chile Waffles with Roasted Brussels Sprouts last night & I had hoped to bring you a recipe today, but those little buggers wouldn't stop sticking! They were tasty though! I think my waffle iron may be on its way out, so I may get a new one & try them again, so I can share the wealth!

Dining with Delta, Candy Craziness, Donut Mania, & Testing for Terry Hope Romero!

While dining in Europe was a dream, there are these little things called plane rides you have to take to get to your destination. In the 2 weeks I traveled, I was on 10 airplanes, which meant I was at the mercy of airplane food more than a few times. Of course, I pack my own snacks, as I know it's unlikely I'll be satisfied or even properly fed while in the air, but I thought you might like to see some of the food given to me. I flew Delta Airlines for all of the following meals & requested the "VGML" or Vegetarian, Non-Dairy meal.

Vegan airplane dinners seem to be pretty standard across the board; a grain of some sort, vegetables in some unidentifiable sauce, an iceberg lettuce salad, & a bread roll. Often you'll be given a "non-dairy margarine" on the side, which has never been vegan in the history of my flights. Delta did a fine job with dinner food, I appreciated the fruit salad one night, & the beans in my entree the next, but they failed when it came to breakfast. Special dietary meals are brought out before the others, so I was handed my breakfast of a pre-packaged croissant with non-vegan margarine, high fructose corn syrup jelly, an unripe banana & juice from concentrate before everyone else. I inquired about the non-dairy status of the croissant & the attendant said it should be vegan, to which I responded, "butter?" & the attendant revoked it's non-dairy status. The rest of the airplane was served the exact same meal & despite mine being labeled VGML, it was very obviously not. The next disappointment came in the form of a sandwich. I unwrapped the plastic wrapped torpedo only to find a thick layer of what could have been butter or "non-dairy margarine" with only tomato & limp lettuce. Vegan or not, no thank you!

So, why am I complaining about this when all airplane food tends to be bad? It's important that airlines know that when they mark something non-dairy, they are expected to provide something suitable for not only vegans, but people with allergies, people with religious affiliations, & others refraining from it. I make sure to write a letter to each & every airline that gives me something in a VGML meal that is not vegetarian non-dairy. I'm diligent enough to check the labels of food they give me, but how many people have trusted them & had milk solids in their salad dressing? What if someone was to get sick? I encourage everyone who runs across similar issues to contact the company, as it benefits everyone.

On a lighter note, Delta's in-flight snack is the best ever! They serve Biscoff cookies, aka Speculoos Caramelized Biscuits. I first found these biscuits in a market in Prague, then the mania swept the PPK & the Speculoos spread was discovered. I can confirm that the spread is crazy good, as a generous friend sent me some it's difficult not to sit & eat it with a spoon. I love these biscuits & I had no problem collecting the un-eaten ones from my fellow flight goers to savor throughout the journey!

I'm sure I've mentioned in my many posts about Europe that I love shopping for food! I went in vegan shops, bio markets, & everything in between in search of exciting treats & boy, was I successful! The photo you see is all the sweets I purchased over the two weeks & brought home. I gave some of it away, but for the most part, we've been eating it & most of it is gone! While Ryan's happily chowing down on gummy cola bottles, for me the highlights include Peppermint Ritter Sport (which are no longer vegan, watch out for butterfat!), Lemon Cream Manner bars, Gelee Bananen, Maple filled Stroopwafel & my absolute favorite, Sonnina Pfefferminz Taler! Seriously, if anyone can find the Sonnina brand, I NEED more of these York Peppermint Patty replicas & will make it worth your while!

Donut Mania is here! Have you noticed? Maybe you've caught the fever as well? It seems Donuts are the new Cupcakes & everywhere you turn a vegan donut company is popping up. I am certainly not one to complain about this trend, as I spent many days sitting on 50lb bags of flour in the back of a donut shop as a child. I've been lucky enough to try most of the options out there, but two remain my top contenders & I just happened to have both of them hand delivered to me in the past few weeks. As I stepped off the plane from Europe, Ryan was coming home from Las Vegas, home of Ronald's Donuts, aka the best vegan donuts on earth. Needless to say, he brought back a dozen of these perfectly raised, doughy gems & I was thrilled. It's hard to say which is my favorite, I do love a basic glazed, or a cinnamon bun, but the apple fritter is pretty stellar as well. These are certainly not health food, they're the corner shop Sunday morning donuts you remember from your childhood!

On the healthier side of donuts are my favorite cake donuts by Mighty O Donuts in Seattle. Once again, a business trip brought Ryan home with an assortment of donuts & there were no complaints here! Everything from French Toast to Nutty Chocolate to Cinnamon Sugar was at my fingertips, but my favorite is the good old Vanilla Cake Glazed, simple & delicious. Not only are these tasty morsels all vegan, they're organic too! If you're in Seattle, don't miss a stop in to their shop or if you have a friend visiting, do as I did & demand some donuts!

Despite all the sugary foods, I have been cooking as well. Shocker, right?! I'm a tester for a few cookbooks right now, which is always fun & keeps me from making the same 5 dishes over & over. Terry Hope Romero of Veganomicon & Vegan Cupcake Take Over the World fame is writing a Vegan Latina cookbook & it's already knocking my socks off! The most recent dish I made was the Chipotle Seitan & Potato Tacos. Terry's homemade seitan is marinated in a beer, lime, chipotle mixture, then grilled & piled in to soft corn tortillas with Roasted Potatoes, crunchy veggies, & topped with a Lime Yogurt Crema! I'm not a drinker, but the flavors of everything played so well together, I didn't even notice the beer. Ryan flipped for these! By the way, Terry & Isa have a new book coming out called Vegan Cookies Invade Your Cookie Jar, have you ordered it yet?

Next week, I'm headed out to Chicago to hang with my favorite Baker & Destroyer, plus partake in potluck & Dandies eating with the folks at Chicago Soy Dairy. Southern California; Valentines at Vinh Loi Tofu, Madeleine Bistro, Shine Cafe & Donut Mania!

Having family & friends in another part of the state can have an upside; an excuse to travel! Recently, Ryan, Strummer, & I hit the road heading south in search of all things good & vegan. Boy, did we hit the jackpot!

It all started with Valentine's Day, not a favorite of this crew, but an excuse to dine out nonetheless. Rather than make it a private affair, we rounded up an awesome posse of vegan bloggers to celebrate with! Miss Anthrope & Mr. Meaner of Quarrygirl.com, Ms. Foodeater of To Live and Eat in LA, & Vegyogini from Hugger Food all made the trek to our agreed upon destination, Vinh Loi Tofu in Reseda. Vinh Loi Tofu serves up 100% vegan Vietnamese food & we were lucky enough to be pampered by chef & owner, Kevin, who made sure we were more than full before the night's end.

We all started with a round of rolls filled with Kevin's special mock meats. Faux beef, chicken, ham & house made tofu wrapped in rice paper were delivered to our tables, dipped in to peanut sauce & devoured. If you're faux-meatphobic, be warned, this stuff is serious & I found myself a bit alarmed, but unable to deny the deliciousness! Next we shared Lemongrass + Chili & Mushroom + Noodle fried tofu, another tasty treat that quickly made its way in to our bellies. Shortly after everyone placed their entree orders, Kevin delivered a plate of freshly made tofu to the table, still warm, as he heard I am a fresh tofu fan. WOW, the tofu was amazingly delicious & we devoured it plain, no seasoning needed! As an entree, I ordered the Pho with tofu, instead of the faux shrimp & chicken it comes with, per Kevin's suggestion. This man knows his food! I was more than happy with my selection & filled up on the fresh tofu, rice noodles, & vegetables in a delicately spiced broth!

As if we weren't stuffed enough, the darling Quarrygirl.com duo brought us an assortment of Dee's Donuts for dessert. We tried various flavors from vanilla to chocolate, coconut to sprinkles & everything in between. I found them to be a bit dense for a donut, sitting somewhere between a cake & raised confection, with a slightly too thin glaze. While they weren't bad at all, I have been spoiled by the perfection that is Ronald's Donuts, so I tend to compare all to their mightyness. That being said, if you're in LA & dying for a donut, Dee's may hit the spot for you.

The next day, we took Ryan's family to brunch at a place we've enjoyed in the past, Madeleine Bistro, home of vegan chocolate souffle! I was excited to try their morning offerings & we had high hopes as we rolled in to Tarzana, omni family in tow. Ryan & his father opted for the "Bigger Maque", two no beef patties, special sauce, lettuce, pickles, onions.. ala the fast food chain staple. Neither found themselves disappointed & were surprised to find how much it tasted like a high-end version of its trashy counterpart! Tempted by the sweeter offerings, I opted for the Bananas foster waffles with a side of crispy tempeh bacon. While the caramel sauce, bananas, & whipped creme were lovely, the waffles had a texture I just could not get behind, so they were a miss for me. Ryan's mother enjoyed her Club sandwich though, so 3 out of 4 ain't bad! Actually, we all ended up very happy when the next round arrived.. fresh organic donuts!

Madeleine Bistro makes their own organic raised donuts available at brunch only. I ordered 4 of them to go, but asked that they come on a plate, so I could photograph them. Once everyone laid eyes on them, there was no way we were saving them for later & they disappeared from the plate! The donuts are incredible! Light & fluffy with a sugary coating, you don't know whether to scarf them down or savor each bite. Ronald's may have some competition if Madeleine's ever expanded their flavors! If this wasn't endorsement enough, we ordered 4 more donuts, this time to go. I had the chance to chat with Molly, one of the owners, for a bit & she was just lovely. After our chat, she dropped a container in my hands with two little chocolates in it, their version of Milky Way bars! The little bites were scrumptious & hit the spot later that day.

On our way back to San Francisco, we stopped in San Luis Obispo, a coastal town along Highway 101, home of Ryan's alma mater & our good friend Josh. SLO has quite a number of vegan options, my typical favorite being Big Sky Cafe, but we opted to try a place I have been meaning to check out, Shine Cafe in Morro Bay. Nestled in the back of a health food store, Shine Cafe may not look like much, but looks can be deceiving! 99% of the menu which consists of salads, smoothies, soups, & entrees is vegan, just ask the friendly staff which items are not. We opted for the most talked about items, the Tempeh Reuben & the Tempeh Tacos. Giant plates heaped with fresh produce were delivered to us, giving off quite the hippie food vibe. The Reuben was served on sprouted bread with well seasoned tempeh & sauerkraut, while it lacked the tangy sauce of a typical reuben, it still hit the spot. The Tempeh Tacos were fabulous! I enjoyed the cilantro lime dressing atop a bed of lettuce, carrot, & red cabbage. After eating the "salad" from the top, you'll find a flavorful mix of quinoa & tempeh, housed in tortillas. Overall, Shine Cafe is a great little place for healthy, delicious vegan food, perfect when you're on the road or have consumed too many donuts!

In activist news, the PCRM is currently working to get healthy, vegetarian & vegan options in the National School Lunch program & YOU can help! Please go to http://healthyschoollunches.org & sign the petition to urge congress to include vegan options for children across the United States. Anyone can sign, even kids, so please pass this on to everyone you know!

Souley Vegan, Peanut Butter Cups, & Ronald's Donuts!

When I'd heard a new all vegan restaurant opened in nearby Oakland, my interest was piqued. Previously only available at a Farmers' Market stall, Souley Vegan, specializing in soul food opened up a store front recently. The Bay Area PPKers rule at having meet-ups, so I was lucky enough to try it with a group of friends. A large group of us, around 15 people or so, rolled in on a Sunday afternoon & despite only having 4 tables & 3 people on staff, they graciously accommodated us! In fact, the owner Tamera came out herself to chat with us & thank us for dining there & let us know they're currently working to upgrade the interior & add seating.

The number of menu items may be small, but the options seem plentiful whether you order a plate with pre-selected items or assemble your own for $10. There's also the option of ala carte for those not interested in 3 menu items piled high on their plate in large portions. Collard Greens, Potato salad, Mac & Cheese, Yams, Cornbread, Beans & Rice, Peach Cobbler & other standard soul food fare are the name of the game here as well as BBQ Tofu or Crispy Tofu. I was able to try a large selection of items by sharing with Ryan & the others; while it's a bit heavier than my typical lunch, I throughly enjoyed stuffing myself! I can still taste the yams melting in my mouth, the spice of the Mac & Cheese, & the Potato salad leaves just about anyone craving more. Overall, Souley Vegan is a place worth checking out when in the Oakland & is a welcome addition to vegan dining in the Bay Area!

As you know, I love making treats for others, so I brought along a little something for all the PPKers partaking in the meet-up at Souley Vegan; Peanut Butter Cups! Ryan, the peanut butter fiend had mentioned he was craving them, so I figured I'd make a larger batch & churned out 20 or so using a recipe from Kelly & Garrick's upcoming cookie book. Unlike another batch I made, these were full sized, as I just happened to have the wrappers from a previous project & put them to use. It's pretty rare I get an inside shot, but I managed to snap one before I completely demolished this little morsel. These aren't just smooth peanut butter inside, but have the same texture as that not-so-vegan brand you find in the grocery store. Mmm mmm!


I was recently blessed with a treat that has been on my "to try" list for quite some time, but seemed unaccessible unless I hopped on a plane to Las Vegas; Ronald's Donuts! My fairy vegmother & favorite vegansaurus Laura, gave me yet another reason to love the hell out of her when she arrived from the airport on my doorstep to deliver the goods. Let's just say I was freaking out & far too excited for a pastry. You see, these aren't dense, cake donuts like you find in other parts of the country, but they're raised donuts. They aren't organic, healthy, or gourmet in any way, shape, or form, these are pure, unadulterated junk food! I talked Laura's ear off about flavors I was interested in trying, but was happy to take anything she had to offer, which happened to be a Bear Claw & a soy Custard filled, topped in chocolate!

Straight up, these are the bready, chewy, delicious donuts you used to eat on Sundays or grab from the break room at work. The Bear Claw was covered with glaze & a cinnamon-sugar topping, plus had an apple & cinnamon filling in a gel that tasted a bit strange on its own, but as a combination with the donut was perfectly tasty! I never fancied myself a filled donut person (& Ryan downright hates them), but we were both in love with the sweet, thick vanilla custard filling of our donut & the chocolate topping made me melt, as it had always been a favorite of mine as a child. I'm tempted to wait for a cheap flight & have all the local vegans chip in to have dozens & dozens brought back to them! If you're a donut fan, you need to figure out a way to get to Las Vegas for Ronald's Donuts at 4600 Spring Mountain Road!

Pumpkin Doughnuts with Cinnamon Glaze.

The sweet treats of NYC are coming soon, but in the mean time, here’s a recipe that somehow came together in my kitchen this weekend for the monthly Vegan Brunch Cartel. Experimentation, a little bit of this & a little bit of that seemed to pay off in the form of Pumpkin Doughnuts. I wanted to share this with you before the ingredients have left the markets, so you can have your own weekend brunch treat with friends!

Pumpkin Doughnuts (Special equipment needed; donut pan.)
Ingredients:
1 cup AP flour
1 cup WW Pastry Flour
3/4 cup brown sugar, packed
1 1/2 tsp baking powder
1/2 tsp baking soda
2 Tbsp cornstarch
2 tsp pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp allspice, 1/4 tsp nutmeg)
1 tsp cinnamon
1/2 tsp salt
3/4 cup pumpkin, freshly roasted or canned
1 1/4 cup soy milk
1/4 cup Earth Balance (or other margarine), softened
1 tsp vanilla
1 tsp apple cider vinegar

Instructions:
Preheat the oven to 375 degrees.

In to a medium bowl, sift together flour, baking powder, baking soda, cornstarch, pumpkin pie spice, cinnamon, salt, then add in the brown sugar.

Add pumpkin, soy milk, vanilla, margarine, & vanilla; beat with an electric mixer on low speed or whisk until just mixed.

Add the apple cider vinegar & carefully fold it in until just mixed.

Fill the wells of your donut pan almost to the brim. Bake them for 10 minutes, or till golden brown.

Remove the doughnuts from the oven & allow them to cool on a rack.

Cinnamon Doughnut Glaze
Ingredients:
1 cup confectioners sugar, sifted
1/2 tsp vanilla
4 tablespoons soy milk
1/2 tsp cinnamon, or to taste

Instructions:
Whisk all of the ingredients together.
If you like a thicker glaze, add more confectioners sugar, to make it more icing-like.

After the doughnuts have cooled, use a spoon to drizzle the tops, allowing the excess to fall to parchment paper below your cooling rack.

This yields 12 doughnuts.

My Notes:
While these aren't the amazing Mighty O, these lightly pumpkin flavored little treats will satisfy your seasonal sweets craving! I was happy with the results & the VBC crew didn't seem to have any complaints!

A Labor Day Potluck, In my Kitchen, & NYC!

Gathering with friends is always something I enjoy & I used Labor Day Weekend as an excuse to have a potluck! An awesome range of friends attended & I was excited many members of the "vegan brunch cartel" were able to make it. The culinary prowess was at an all time high & the food was insanely delicious! As planned, we all ate far too much, yet there was still a ton of food on the table! Luckily, I had my empty Earth Balance containers ready & sent people home with leftovers, as there was no way we could consume what was left!

For the bash, I whipped up Vanilla Cupcakes from my own recipe & topped them with both Lemon Cream Cheese frosting & Mocha Mousse frosting. No one guessed they were vegan, so I believe I'm finally happy with my vanilla cupcake recipe & will be sharing it here in the near future!
By request, another round of Lolo's Donuts were made, this time in Maple & classic Pink Glaze with Sprinkles. I'm done making these for awhile, I adore them, but there's so many other treats I've been meaning to make!

In the savory department, I made tamales, thanks to Dr. Stonielove! I have a constant craving for tamales, but had never made them myself, but her recent recipe gave me the courage to do so! One batch contained black beans, soyrizo, & jalapeños, the other was filled with corn, red & yellow bell peppers, & chilies. I was VERY happy with these & snuck some in to the freezer to enjoy later. We also made Tempeh kabobs to grill along side all the veggie dogs & burgers people brought!

As a joke, I decided to use vegan gelatin to craft a giant cupcake. Sadly, it's not the most stable product out there, so it started to melt pretty quickly. I shoved it in to the freezer, only to find it solid & much shorter than when I initially assembled it when I went to retrieve it. Use your imagination & we'll say it started out glorious & mind blowing, okay?!


Other attendees brought delicious dishes like Bruschetta, the Get Sconed version of New Farm Mac and Cheez, Curried "Chicken" salad in Endive wraps, Hummus with pita & cucumber, Spinach-Artichoke dip, & as you can see, an amazing display of Fruit Kabobs! (This is what happens when a caterer attends your potluck!)

I had a fabulous time & I can't wait for the next excuse to gather around a diverse setting of food with various people! I think I may have a potluck obsession & I'm perfectly OK with that!

In other news, I've been going crazy in the kitchen lately! I've been so inspired by all the blogs I've been reading, as well as the PPK, all I've wanted to do is try new recipes (& make sorbet, of course)!

Recent recipes have included Celine's L & H Seitan O'Greatness, which was used to make Lolo's Crispy Sweet and Sour Seitan. I'm also a tester for Joni's new cookbook about burgers, so I made her Ortega Burgers on homemade whole wheat french bread with oven fries. A desire for something besides Tofutti in the morning yielded Bryanna's Lemon Curd & let me tell you, it is FABULOUS! My crumpets will forever be covered with this insanely addictive spread!

On the sorbet front, I made a wonderful Strawberry Sorbet that we gobbled up quickly! Yesterday in a 12 hour span I managed to make Watermelon Sorbet, Yellow Peach Sorbet, & Bartlett Pear Sorbet! The plan is to have some in the freezer to be consumed when the mood strikes, but it seems to disappear pretty quickly around here! I'm happy to see others have caught the sorbet bug as well, like Amey at Vegan Eats & Treats!

In travel news, I'll be headed back to one of my favorite places, NEW YORK CITY! woo.
While I've been there many times, I'm always looking for restaurant & activity recommendations, especially of the vegan persuasion. I'm not a greasy spoon diner type (I can make a veggie burger at home), but I love a range of tasty foods, especially healthier vegetable heavy items or ethnic fare, so bring it on! I'll be in town for 2 weeks in late October / early November, so there's plenty of meals & fun to be had!

Lolo's Baked Vegan Donuts, Glazed or Chocolate covered!

Last weekend, I attended a fabulous potluck organized through Yelp called the "Vegan Brunch Cartel". Although all food had to be vegan, it was attended by a great group of folks, both vegan & non.

I debated what to bring, as the first edition yielded some dishes people were still raving about as the 2nd one was organized. A mention of donuts was received with fanfare, so I started my search for the perfect recipe.

This recipe comes from the amazing Lolo at VeganYumYum! Do yourself a favor & check out her blog & recipes NOW. I voted for her in the 2007 Veggie Awards & she has an upcoming cookbook I'm excited to get my hands on!

Lolo's Baked Vegan Donuts
Ingredients:
1 cup all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/4 tsp salt
1/4 tsp nutmeg
1 shake of cinnamon (I was out of nutmeg, so I used all cinnamon & more than a shake!)
1/2 cup soymilk
1/2 teaspoon apple cider vinegar
1/2 teaspoon vanilla
Egg replacer for 1 egg (I used Ener-G Egg Replacer.)
4 tablespoons Earth Balance or other vegan margarine

Instructions:
Preheat oven to 350º F.

In a large bowl, combine dry ingredients with a whisk to mix thoroughly.

In a small saucepan, combine wet ingredients over medium low heat & mix until margarine is melted. You should be able to stick your finger in the mixture without burning yourself. Don't make this too hot for the dough!

Add wet to dry & mix until just combined, forming a soft spongy dough.

Using a tablespoon measure, scoop out dough into an ungreased nonstick mini donut pan & smooth out the tops of them. If using a regular sized donut pan (like I did), fill them until just below the rim. Make sure not to overfill them or they'll have uneven muffin tops. If you under fill them, they'll be skimpy, but still edible.

Bake them for 12 minutes or until a tester comes out clean.

Invert the hot pan over a cooling rack to release the donuts & allow them to cool completely before decorating.

This will yield 20 mini donuts or 6 to 8 large donuts.
If you don't have a donut pan, you can bake them as donut holes in the bottom of a mini muffin pan or make fun shapes in those molded silicone pans!

Glaze for Donuts & other confections
Ingredients:
1/2 cup powdered sugar
1 tablespoon soy milk
my additions:
a splash of vanilla (optional)
a bit of agave nectar (optional)

Instructions:
Whisk all of the ingredients together.

Dip half of the donut into the glaze, let some drip off, then dip glaze-side down into sprinkles.

Transfer the donuts to a wire rack with parchment paper underneath, the excess glaze will drip through the rack onto the paper for easy cleaning later.

My Notes:
This makes a great all-purpose glaze for treats! I added vanilla & agave nectar for some extra sweetness & gloss, but it's good without them as well.

Chocolate topping for Donuts
Ingredients:
Your favorite vegan chocolate, approximately 6 ounces. (I use E. Guittard Semisweet chocolate.)

Melt the chocolate over a double boiler & remove from the heat being careful not to get water in the chocolate.

Dip your donuts into the chocolate until completely covered & place on a wire rack to drip off excess chocolate.

My Notes:
I found the dipping process to be a bit awkward, some of my donuts didn't want to leave the glaze & chocolate easily, so I was afraid they'd break! In the end, I took my offset spatula & glazed them thickly, letting the excess drip off the sides, then threw sprinkles on top. This worked best for me, but you may like the ease & speed of dipping them.

I tried two donut recipes, hoping to bring chocolate cake donuts as well, but the results of the other recipe (from a vegan cookbook) were not to my standards, so I did not bring them along. In the end, I was very happy with Lolo's donuts & will definitely make them again! I had extras, so I dipped them lightly in agave nectar, then coated them with a cinnamon-sugar blend; so delicious!

The Vegan Brunch Cartel was a total success! Not only was the food delicious, but the people were entertaining & the Victorian house it was held in was gorgeous. An open kitchen & vintage stove complete with 6 burners & a hot plate allowed dishes to be made right before the meal, as we all stood around & chatted. Cinnamon rolls, blueberry corn pancakes, samosas, apple brown betty, home fries, french toast, & "egg" salad sandwiches flowed freely; we were all stuffed! If you're ever in San Francisco, get in touch, if one of these events is happening, you shouldn't miss it!
